Steeps
Cylindro-conical bottomed steeping vessels constructed from stainless
steel are favoured by the group. In these, the barley (or other
grain) can be steeped in natural water extracted from boreholes.
The water/barley mix is “roused” at regular intervals
with large volumes of low pressure air. Air “rests” are
introduced at appropriate intervals to provide the chitting grain
with sufficient oxygen, and remove the CO2 that has been expired.
The ideal steeping programme is developed each season for each
grade of barley to produce optimum hydration of the endosperm.
In extremely cold winter conditions, the steep water temperature
can be raised a few degrees to compensate for low ambient temperatures
which would otherwise inhibit the steeping results.
