Crystal Dark Medium
Crystal Dark Medium is a bold, intensely crystalised malt that imparts hints of toffee, dark caramel and dried fruit notes, along with a deep amber to ruby hue (190-225 °EBC).
It enhances body, mouthfeel and malt complexity, making it ideal for Red Ales, Porters and Stouts, where a deeper caramel sweetness and colour contribution is desired.
Compared to Crystal Medium (167-190 °EBC), Crystal Dark Medium offers more intense caramelisation and a richer, deeper sweetness, with the first hints of light burnt sugar complexity. It remains less intense than Crystal Dark (200-250 °EBC), which leans more toward darker toffee and light roasted notes.
Typically used at 5-15% in the grist, Crystal Dark Medium provides a full, warming malt backbone, balancing hop bitterness with layers of toffee, caramelised sugar and subtle dark fruit complexity – perfect for brewers looking to add depth and richness without overpowering roastiness.
