Vienna Malt
Vienna Malt is a subtly kilned malt that provides a toasty, slightly sweet malt character with a warm golden-orange hue (5-10 °EBC). It offers gentle honeyed notes, light biscuit undertones and a delicate malt richness, making it perfect for Vienna Lagers and Märzens, where a balanced malt backbone is essential.
With a slightly higher modification than standard pale malts, it ensures good conversion in the mash while adding depth without overwhelming sweetness.
Compared to Munich Malt, Vienna Malt is lighter in colour and less intensely malty, offering a more restrained toastiness rather than deep caramelised breadiness. It works well as an addition in lighter ales to boost malt complexity or up to 100% in Vienna Lagers for an authentic, smooth malt foundation.
