Flaked Barley
Flaked Barley is an unmalted adjunct that brings a distinctive creamy mouthfeel and improved foam stability to a range of beer styles.
Produced by steaming and rolling barley into flat flakes, this ingredient contributes subtle grainy flavour, body and a smooth, velvety texture without introducing enzymatic activity.
It’s particularly valued in Stouts and Porters, where it helps develop that characteristic dense head and adds chewiness to the body.
Unlike malted barley, it won’t contribute fermentable sugars, but its starch content makes it ideal when mashed with a base malt high in diastatic power.
Typically used at rates of 5-20%, depending on the style and desired effect, Flaked Barley is an excellent tool for enhancing texture and visual appeal, becoming something of a go-to for traditional and contemporary dark beers alike.
