Dark Aromatic Malt is a highly kilned malt (130-150 EBC) that brings a bold, malty depth with layers of complex dried fruit and bready richness, sitting between traditional Aromatic Malt and Specialty Roasted Malts.
It delivers malt loaf notes, with a hint of burnt raisin and marmalade tang, all carried on a dry, biscuity backbone. Though not overtly sweet, it offers a balanced interplay of fruit and malt, finishing clean with a mild astringency and subtle bready linger.
Compared to our regular Aromatic Malt, Dark Aromatic has greater colour and intensity, while its white malt-like crunch and nuanced flavour make it ideal for Dark Ales, Belgian styles, Porters and specialty IPAs, where a touch of complexity and malt intrigue is desired.
When used at the recommended rate of 5–15%, it imparts rich aroma, subtle fruitiness, and layered malt character without overpowering the grist.
