Chit Malt is a very lightly germinated malt designed to boost foam stability, body and mouthfeel without contributing significant colour or flavour (typically 2.5–3.5 EBC).
Retaining much of the raw barley's protein and enzyme content, it is ideal for modern beer styles like Hazy IPAs, NEIPAs and unfiltered Lagers, where enhanced haze, head retention and structure are key.
Unlike Dextrin Malt, which adds unfermentable sugars and a subtle sweetness, Chit Malt is less sweet, more functional and excels in delivering body-building proteins and haze-positive compounds with minimal impact on grist colour or flavour.
Typically used at 3–10% of the grist, Chit Malt is perfect for brewers seeking to enhance mouthfeel and foam in lighter or hop-forward styles, while maintaining a clean, fermentable base.
